Brined Pastured-Raised Pork Chops
Our pasture-raised pork chops aren't the same old chops you can pick up at the grocery store. These will steal the show, and we guarantee you'll want more.
They're also super easy to prepare and cook. Here's a quick and simple way to get these chops to the table:

Step 1: Brine your chops
A few hours before you'd like to cook your chops, mix together four cups of water and a quarter cup of salt. Thaw your chops in this brine for a minimum of two hours (longer is fine, too!). Step 2: Cook the chops Pull out your trusty skillet. Take your chops from the brine and cook one side on medium-high heat for 7 minutes. Flip the chops to the other side and cook for 7 more minutes. Check the temp of your chops (pork should be cooked to 145 degrees). Once thoroughly cooked, remove from the heat and let the chops rest for 5 minutes. (Note: These are also great grilled!) Step 3: Devour the pork chops. Be warned: you may not have leftovers. These chops are great on their own, or with delicious sides (we love sautéed spinach and a root veggie medley with ours-- but our preferences change with the seasons!). Unlike store bought chops, we keep a small amount of fat on our pasture-raised pork chops. Not only is it delicious, but it's also full of vitamin D. |
