Farm-to-Table Recipe:

Easy Sheet Pan Veggies & Sausage

As I've proclaimed before, I'm a "lazy chef."  This recipe is on my list of easy go-to dinners when I don't feel like making many decisions, or doing much in the kitchen.  This is a "choose-your-own-adventure" type of recipe; use what you have, what you're in the mood for and what's in season.
INGREDIENTS
  • 1 lb of sausage links, any type 
  • ​a variety of winter veggies
  • ​a little bit of olive oil
  • spices as desired
INSTRUCTIONS
  1. Preheat your oven to 425 degrees. ​
  2. Slice and dice your root veggies.  I almost always throw in onions, but may also add a mix of potatoes, beets, carrots, parsnips, brussel sprouts, sweet potatoes, broccoli, cauliflower or whatever else I have on hand.
  3. Lay these out across the cookie sheet and drizzle them with olive oil.  Sometimes we season with just salt & pepper, while other times we choose to add rosemary & thyme.) 
  4. Lay your sausage links directly on top of the veggies. Any flavor of sausage will do.
  5. Bake for 25 minutes.  (No need to stir while cooking.)
